Banana Cream Parfaits
Chill Time: at least 1 hour
Cook Time: 5 minutes
Prep Time: 20 minutes
Yield: Makes 4 servings
Ingredients:

package (4-serving size) sugar-free cook-and-serve vanilla pudding and pie filling mix
2
cups low-fat (1%) milk
1
cup coarsely crushed sugar-free cookies
2
large ripe bananas, peeled and sliced
Mint sprigs (optional)
Preparation:

Prepare pudding according to package directions, using low-fat milk; cool 10 minutes, stirring occasionally.

In each of 4 parfait or wine glasses, layer 2 tablespoons cookie crumbs, 1/4 cup banana slices and 1/4 cup pudding. Repeat layers. Cover; chill at least 1 hour or up to 6 hours before serving. Garnish with mint sprigs, if desired.
Variation:
Sugar-free chocolate pudding and pie filling mix can be substituted for vanilla pudding.
