Spicy Roasted Chickpeas

Spicy Roasted Chickpeas


Ingredients
1 can (about 20 ounces) chickpeas
3 tablespoons olive oil
1/2 teaspoon salt
1/2 teaspoon black pepper
3/4 to 1 tablespoon chili powder
1/8 to 1/4 teaspoon ground red pepper
1 lime, cut into wedges
   
1. Preheat oven to 400°F. Rinse chickpeas in colander; drain well, shaking colander to remove as much water as possible.
2. Combine chickpeas, olive oil, salt and black pepper in baking pan large enough to hold chickpeas in single layer. Bake 15 minutes or until chickpeas begin to brown, shaking pan twice during baking.
3. Sprinkle with chili powder and red pepper to taste; bake 5 minutes or until dark golden-red. Serve with lime wedges.
