Chicken Pomodoro
Ingredients
2
cloves garlic, finely minced
4
boneless, skinless chicken breast halves
1/8
teaspoon crushed red pepper flakes (optional)
1
tablespoon olive oil
1
can (14-1/2 ounces) DEL MONTE® Stewed Tomatoes - Italian Recipe
2
small zucchini, cut in half lengthwise and sliced crosswise
2
tablespoons thinly sliced fresh basil leaves
or
1/2 teaspoon dried basil
1/3
cup whipping cream

23 minutes
1.
Rub garlic over chicken. Sprinkle with red pepper flakes. Season with salt and pepper, if desired.
2.
Brown chicken in oil in large skillet over medium-high heat. Stir in tomatoes, zucchini and basil.
3.
Cook, uncovered, over medium-high heat 15 minutes or until sauce is thickened and chicken is no longer pink, stirring occasionally.
4.
Stir in cream; heat through.
Do not boil.
