Easy Nachos
Yield: Makes 4 servings
Ingredients:
4
(6-inch) flour tortillas
Nonstick cooking spray
4
ounces lean ground turkey
2/3
cup salsa (mild or medium)
2
tablespoons sliced green onion
1/2
cup (2 ounces) shredded reduced-fat Cheddar cheese
Preparation:

Preheat oven to 350°F. Cut each tortilla into 8 wedges; lightly spray one side of wedges with cooking spray. Place on ungreased baking sheet. Bake 5 to 9 minutes or until lightly browned and crisp.

Meanwhile, brown turkey in small nonstick skillet, stirring to break up meat. Drain fat. Stir in salsa. Cook until hot.

Sprinkle turkey mixture over tortilla wedges. Sprinkle with green onion. Top with cheese. Return to oven 1 to 2 minutes or until cheese melts.
Serving Suggestion:
Cut tortillas into shapes with cookie cutters and bake as directed.Tip:
In a hurry? Substitute baked corn chips for flour tortillas and cooking spray. Proceed as directed.
