Northwoods Mushroom Swiss Melts

Ingredients

boneless, skinless chicken breasts (about 1 pound)

3-3/4
|
cups water
|

boxes UNCLE BEN'S® Long Grain & Wild Rice Original Recipe

cup chopped green bell pepper
|
|
1/2
|
cup chopped red bell pepper
|
|
1

cup sliced mushrooms
|
|

slices (1 ounce each) Swiss cheese
|

1. Spray large skillet with nonstick cooking spray. Add chicken, cook over medium-high heat 5 to 7 minutes or until lightly browned on both sides.

2. Add water, rice and contents of seasoning packets. Bring to a boil. Cover; reduce heat and simmer 20 minutes.
|
|
3. Stir in bell peppers; sprinkle mushrooms over chicken. Continue cooking, covered, 5 to 8 minutes or until chicken is no longer pink in center.
|
|
4. Place cheese over chicken. Remove from heat; let stand covered 5 minutes or until cheese is melted.
