Sautéed Mangoes & Peaches with Peanut Brittle Topping
Prep and Cook Time: 17 minutes
Yield: Makes 4 servings
Ingredients:

tablespoons butter
2
large ripe peaches, cut into wedges
1
medium ripe mango, peeled and sliced
1
tablespoon brown sugar
4
scoops vanilla ice cream
1/2
cup peanut brittle, crushed
Preparation:

Melt butter over medium-high heat in large nonstick skillet Add peach and mango slices; sprinkle with brown sugar. Cook and stir gently 3 to 4 minutes or until heated through and fruits begin to soften.

Divide fruits equally among 4 individual dessert bowls. Top each with 1 scoop ice cream and peanut brittle.
Note:
Purchased mango slices in light syrup packed in jars can be substituted for fresh mango slices. Look for them in refrigerated area of the supermarket produce section. Drain them well before using.
