Colorful Kabobs
Yield: Makes 10 kabobs
Ingredients:
30
cocktail-size smoked sausages

10
to 20 cherry or grape tomatoes

10
to 20 large pimiento-stuffed green olives

2
yellow bell peppers, cut into 1-inch squares

1/4
cup (1/2 stick) butter or margarine, melted

Lemon juice (optional)

Preparation:
1.
Preheat oven to 450°F.

2.
Thread 3 sausages onto 8-inch wooden skewer,* alternating with tomatoes, olives and bell peppers. Repeat on remaining nine skewers.
*Soak skewers in water 20 minutes before using to prevent them from burning.

3.
Place skewers on rack in shallow baking pan. Brush with melted butter and drizzle with lemon juice, if desired. Bake 4 to 6 minutes until hot.

On-the-Go Guide: For younger children, remove food from skewers and serve in a paper cup or bowl. It's still portable, but much safer.
