Yield: Makes 4 servings
Jerk seasoning is a Jamaican spice blend that adds a fabulous flavor to chicken, pork and just about anything else you want to sprinkle it on.
Ingredients:

teaspoon Jerk Seasoning (recipe follows)

boneless skinless chicken breasts (about 1 pound)

tablespoons reduced-fat mayonnaise

tablespoons plain nonfat yogurt

1
tablespoon mango chutney

4
onion rolls (2 ounces each), split and toasted

lettuce leaves

slices peeled mango or papaya



Preparation:
1.
Prepare Jerk Seasoning. Sprinkle chicken with jerk seasoning and set aside. Spray grid with nonstick cooking spray. Prepare grill for direct cooking.

Place chicken on grid, 3 to 4 inches from medium-hot coals. Grill 5 to 7 minutes on each side or until no longer pink in center.

Combine mayonnaise, yogurt and chutney in small bowl; spread 1 tablespoonful onto each onion roll.

4.
Place chicken on onion roll bottoms; top each with lettuce leaf, 2 slices of fruit and roll top.
