Jiffy Chicken & Rice Gumbo

small green bell pepper, coarsely chopped
|

tablespoons margarine or butter
|
|

pound boneless, skinless chicken breasts, cut into 1-inch pieces
|

(14-1/2-ounce) can diced tomatoes with garlic and onion, undrained
|

to 1 teaspoon Creole or Cajun seasoning*
|
|
*1/2 teaspoon cayenne pepper, 1/4 teaspoon dried oregano and 1/4 teaspoon dried thyme can be substituted.

1. In large skillet over medium heat, sauté rice-vermicelli mix and bell pepper with margarine until vermicelli is golden brown.
|
|
2. Slowly stir in 2-1/4 cups water, chicken, tomatoes, Creole seasoning and Special Seasonings; bring to a boil. Reduce heat to low. Cover; simmer 15 to 20 minutes or until rice is tender.
