Desert Thirst Punch with Red Eye Cubes
Makes 10 servings
Ingredients
2 cups sugar
1 cup water
1/4 cup grated fresh ginger
  Rind of 1 lemon, cut into strips
3/4 cup fresh lemon juice (juice of 5 or 6 lemons)
7-1/2 cups club soda, chilled
  Lemon slices (optional)
  Red Eye Cubes (recipe follows)
   
1. Prepare Red Eye Cubes.
2. Combine sugar, water, ginger and lemon rind in medium saucepan. Bring to a boil. Reduce heat to low; simmer 5 minutes or until sugar dissolves and becomes syrupy. Set aside; cool completely. Stir in lemon juice and chill until serving time.
3. Strain 2-1/2 cups lemon juice mixture into 1-quart measuring cup.
4. For punch, pour lemon syrup into large bowl. Add club soda; stir briefly. For individual servings, combine 1/4 cup lemon syrup and 3/4 cup club soda. Add 1 or 2 Red Eye Cubes; garnish with lemon slice.
Red Eye Cubes
Makes about 14 cubes
 
Ingredients
  Maraschino cherries or red seedless grapes
   
1. Fill ice cube tray half full with water. Freeze 30 minutes or until water just begins to solidify.
2. Place 1 cherry in center of each ice cube; cover with more water. Return to freezer for 2 hours or until solid.
