Island Fun Photo
Island Fun
Yield: Makes 16 to 20 servings
Ingredients:
1
(13X9-inch) cake

1
(14X10-inch) cake board, covered

1
container (16 ounces) white frosting

1-1/2
cups graham cracker crumbs

6
green gumdrops

1
pretzel rod, broken in half

Small bear-shaped graham cookies

Assorted decorating gels (optional)

Assorted candies and goldfish crackers

Preparation:
1.
Trim top and sides of cake. Place on prepared cake board.

2.
Tint frosting blue. Frost entire cake with blue frosting. Spoon graham cracker crumbs onto frosting to resemble desert island.

3.
Flatten gumdrops with rolling pin on smooth flat surface or sheet of waxed paper sprinkled with sugar. Roll until very thin (about 1/16 inch), turning frequently to coat with sugar. Cut each gumdrop into leaf shape with sharp knife or scissors. Place pretzel rod half in center of island and carefully attach leaves to top of pretzel with frosting to form palm tree as shown in photo.

4.
Decorate bear-shaped cookies with decorating gels, if desired. Arrange bear-shaped cookies, candies and goldfish crackers on cake as shown in photo.
