Sweet & Sour Vegetable Couscous
Prep and Cook Time: 20 minutes
Yield: Makes 4 servings
Ingredients:
1
can (14-1/2 ounces) vegetable broth

1
box (10 ounces) uncooked couscous

1
tablespoon vegetable oil

3
cups frozen Asian blend vegetable mix

1/3
cup stir-fry sauce

2
tablespoons honey

2
tablespoons lemon juice

1/4
cup sliced almonds



Preparation:
1.
Pour vegetable broth into medium saucepan; bring to a boil. Stir in couscous and oil. Remove from heat; cover and let stand 5 minutes or until liquid is absorbed. Fluff couscous with fork; cover to keep warm.

Meanwhile, place vegetables in microwavable dish. Microwave according to package directions; drain.

Combine stir-fry sauce, honey and lemon juice in small bowl. Pour over cooked vegetables; microwave on HIGH 1 minute.

4.
Spoon couscous onto serving plates. Top with vegetable mixture and sprinkle with almonds.


Hint: For extra flavor and crunch, toast almonds. Place in small nonstick skillet; cook and stir over medium heat 2 minutes or until golden brown. (Watch carefully to prevent burning.)
