Monterey Chicken and Rice Quiche

Monterey Chicken and Rice Quiche


Ingredients
4 boneless, skinless chicken tenderloins, cut into 1-inch pieces
1-3/4 cups water
1 box UNCLE BEN'S® COUNTRY INN® Chicken & Vegetable Rice
1 cup frozen mixed vegetables
1 (9-inch) deep-dish ready-to-use frozen pie crust
3 eggs
1/2 cup milk
1/2 cup (2 ounces) shredded Monterey Jack cheese
   
1. Heat oven to 400°F.
2. In large skillet, combine chicken, water, rice, contents of seasoning packet and frozen vegetables. Bring to a boil. Cover; reduce heat and simmer 10 minutes. Spoon mixture into pie crust.
3. In small bowl, beat eggs and milk. Pour over rice mixture in pie crust; top with cheese. Bake 30 to 35 minutes or until knife inserted in center comes out clean.
 
Serving Suggestion   A fresh fruit compote of orange sections and green grapes or blueberries is the perfect accompaniment to this delicious quiche.
