Sautéed Snow Peas & Baby Carrots

Sautéed Snow Peas & Baby Carrots


Ingredients
1 tablespoon I CAN'T BELIEVE IT'S NOT BUTTER!® Spread
2 tablespoons chopped shallots or onion
5 ounces frozen whole baby carrots, partially thawed
4 ounces snow peas (about 1 cup)
2 teaspoons chopped fresh parsley (optional)
   
In 12-inch nonstick skillet, melt I Can't Believe It's Not Butter!® Spread over medium heat and cook shallots, stirring occasionally, 1 minute or until almost tender. Add carrots and snow peas and cook, stirring occasionally, 4 minutes or until crisp-tender. Stir in parsley, if desired, and heat through.
 
Note   Recipe can be doubled.
