Indian Summer Chicken and Rice Salad
Makes 4 servings
Ingredients
2 cups water
2 cups UNCLE BEN'S® Instant Rice
1/2 cup thinly sliced zucchini
1/2 cup thinly sliced yellow summer squash
4 boneless, skinless chicken breasts (about 1 pound)
2/3 cup creamy Italian salad dressing, divided
2 tomatoes, chopped
   
1. Bring water to a boil; add rice, zucchini and summer squash. Remove from heat and let stand 5 minutes. Cool.
2. Meanwhile, brush chicken with 2 tablespoons salad dressing. Grill or broil 20 to 25 minutes or until chicken is no longer pink in center, turning once. Slice diagonally.
3. Combine rice mixture with remaining salad dressing. Place on serving platter. Surround with tomatoes and top with chicken.
 
Cook's Tip   For a lighter salad with less fat, use reduced-fat salad dressing.
