Raisin Scones

cups all-purpose flour

cup sugar
|

tablespoon grated orange peel

teaspoons baking powder
|
|

teaspoon baking soda
|

cup (1 stick) margarine
|

cup DOLE® Seedless Raisins
|

cup nonfat milk or plain yogurt
|

teaspoon vanilla extract

• Combine flour, sugar, orange peel, baking powder, baking soda and salt.
|
|
• Cut in margarine, using two knives or pastry blender, until mixture resembles coarse crumbs.
|
|
• Stir in raisins. Combine milk and vanilla. Stir into mixture.
|
|
• Form dough into two balls. Pat one ball, on floured board, into 6-inch circle (1/2-inch thick). Cut into 6 wedges. Repeat with remaining dough. Place on baking sheet sprayed with cooking spray. Bake at 400°F 15 minutes. Cool on rack.
