Crispy Tuna Fritters
Prep and Cook Time: 30 minutes
Yield: Makes 6 servings (30 fritters)
Ingredients:
1
cup yellow corn bread mix
1/4
cup minced onion
2
tablespoons minced pimiento
1/4
teaspoon salt
1/8
teaspoon ground red pepper
1/8
teaspoon black pepper
3/4
cup boiling water
1
can (9 ounces) tuna packed in water, drained
Vegetable oil
Preparation:
1.
Combine cornmeal mix, onion, pimiento, salt, red pepper and black pepper in small bowl.
2.
Slowly stir water into cornmeal mixture. (Mixture will be thick.) Stir in tuna.
3.
Pour oil into large skillet to depth of 1/2 inch; heat over medium heat until hot (about 375°F on deep-fry thermometer).
4.
Drop cornmeal mixture by tablespoonfuls into hot oil. Fry over medium heat 1 minute per side or until golden brown. Drain on paper towels.
Serving Suggestion:
Serve fritters with cucumber ranch salad dressing or tartar sauce.
