Sweet and Sour Chicken


Ingredients
6 chicken thighs
2 teaspoons vegetable oil
1 can (8-1/4 ounces) DEL MONTE® Pineapple Chunks In Heavy Syrup
1 can (14-1/2 ounces) DEL MONTE Stewed Tomatoes - Original Recipe
3 tablespoons sugar
1 tablespoon cider vinegar
1 teaspoon soy sauce
1 teaspoon grated gingerroot or 1/2 teaspoon ground ginger
2 teaspoons cornstarch
1/2 green bell pepper, cubed
  Hot cooked rice
   
Prep Time 3 minutes
Cook Time 35 minutes
1. Cook chicken in oil in large skillet over medium-high heat about 15 minutes or until no longer pink, turning once; drain.
2. Drain pineapple reserving syrup. In medium saucepan, combine reserved syrup, tomatoes, sugar, vinegar, soy sauce and ginger; simmer 10 minutes.
3. Combine cornstarch with 2 tablespoons water. Add cornstarch mixture, pineapple and bell pepper to tomato mixture; cook until thickened.
4. Pour over chicken; cook 5 minutes, turning chicken. Serve over hot cooked rice. Garnish with green onions, if desired.
