Fiesta Quesadillas with Fruit Salsa

can (11 ounces) DOLE® Mandarin Oranges, drained and finely chopped

tablespoon chopped fresh cilantro or fresh parsley
|
|
1

tablespoon lime juice
|

(8-inch) whole wheat or flour tortillas
|

3/4
|
cup shredded low fat Monterey Jack, mozzarella or Cheddar cheese
|

2/3
|
cup finely chopped DOLE® Pitted Dates or Chopped Dates or finely chopped Pitted Prunes
|
|
1/3
|
cup crumbled feta cheese
|
|

tablespoons chopped green onion
|
|

• Combine mandarin oranges, cilantro and lime juice in small bowl for salsa; set aside.
|
|
• Place two tortillas on large baking sheet. Sprinkle half of shredded cheese, dates, feta and green onion over each tortilla to within 1/2 inch of edge.
|
|
• Brush outer 1/2-inch edge of each tortilla with water. Top with remaining tortillas; press down edges gently to seal.
|
|
• Bake at 375°F 5 to 8 minutes or until hot. Cut each quesadilla into 6 wedges.
|
|
• Drain salsa just before serving, if desired; serve over warm quesadillas.
