Fiesta Quesadillas with Fruit Salsa
Makes 6 servings
Ingredients
1 can (11 ounces) DOLE® Mandarin Oranges, drained and finely chopped
1 tablespoon chopped fresh cilantro or fresh parsley
1 tablespoon lime juice
4 (8-inch) whole wheat or flour tortillas
3/4 cup shredded low fat Monterey Jack, mozzarella or Cheddar cheese
2/3 cup finely chopped DOLE® Pitted Dates or Chopped Dates or finely chopped Pitted Prunes
1/3 cup crumbled feta cheese
2 tablespoons chopped green onion
   
Prep Time 15 minutes
Bake Time 8 minutes
Combine mandarin oranges, cilantro and lime juice in small bowl for salsa; set aside.
Place two tortillas on large baking sheet. Sprinkle half of shredded cheese, dates, feta and green onion over each tortilla to within 1/2 inch of edge.
Brush outer 1/2-inch edge of each tortilla with water. Top with remaining tortillas; press down edges gently to seal.
Bake at 375°F 5 to 8 minutes or until hot. Cut each quesadilla into 6 wedges.
Drain salsa just before serving, if desired; serve over warm quesadillas.
