Vegetarian Rice & Black Bean Chili

cups UNCLE BEN'S® Hearty Soup Black Beans & Rice

cups water
|
|
1/2
|
cup thinly sliced carrot
|
|

small zucchini, quartered lengthwise and sliced
|
|
1/3
|
cup diced red bell pepper
|
|
1
|
can (8 ounces) tomato sauce
|
|
1/2
|
cup (2 ounces) cheddar cheese
|
|

|
1. Place water in medium saucepan. Stir in rice, beans and contents of seasoning packet. Bring to a boil. Add carrots. Cover; reduce heat and simmer 10 minutes.

2. Add zucchini and bell pepper. Cover; reduce heat and simmer 5 minutes. Stir in tomato sauce. Cover and simmer 8 to 10 minutes or until rice is tender. Top with cheese.
