Combine rice, chicken broth and 1 cup water in medium saucepan over high heat. Bring to a boil; stir once or twice. Reduce heat; simmer, covered, 15 minutes or until rice is tender and liquid is absorbed. Spray large skillet with nonstick cooking spray. Sauté onion, mushrooms and garlic over medium-high heat until onion is tender. Stir in lemon juice and oregano. Add rice, spinach, Ham, cheese and pepper; toss lightly until spinach is wilted.
