Salmon with Citrus-Tomato Salsa

Salmon with Citrus-Tomato Salsa

Salmon with Citrus-Tomato Salsa


Ingredients
4 salmon fillets (about 1-1/2 pounds)
4 tablespoons I CAN'T BELIEVE IT'S NOT BUTTER!® Spread, melted and divided
2 cans (14-1/2 ounces each) diced tomatoes, drained
2 large navel oranges, peeled, sectioned and coarsely chopped
2/3 cup finely sliced green onions
1/3 cup chopped fresh cilantro
2 teaspoons finely chopped, seeded jalapeño pepper (optional)
   
Preheat oven to 400°F.
In 13×9-inch glass baking dish, arrange salmon. Brush with 2 tablespoons I Can't Believe It's Not Butter! Spread and season, if desired, with salt and ground black pepper; set aside.
In large bowl, combine remaining 2 tablespoons I Can't Believe It's Not Butter!® Spread, tomatoes, oranges, green onions, cilantro and jalapeño pepper. Season, if desired, with salt and ground black pepper; spoon over salmon.
Bake 25 minutes or until salmon is opaque and salsa is heated through.
 
Note   Recipe can be halved.
