COOK: CLEAN: Wash hands. In saucepan, melt butter over medium heat. Sauté onion until translucent but not browned. Add rice, water (according to package directions) and contents of seasoning packet. Cook according to package directions, omitting butter. Five minutes before rice is done, stir in thyme. When rice is done, stir in apple and blue cheese; cook until heated through, about 1 minute.
SERVE: Garnish rice with pecans. Serve as an accompaniment to chicken, if desired.
