Shrimp and Rice Salad
Ingredients

(2-cup) bag UNCLE BEN'S® Boil-in-Bag Rice
1-1/4
cups snow peas
1/2
pound cooked peeled, deveined shrimp
1
cup sliced celery
1/2
cup reduced-fat mayonnaise
1/2
cup thinly sliced carrot
1/2
cup diced red bell pepper
1
tablespoon fresh lemon juice
1.
Cook rice according to package directions. Rinse under cold running water to cool; drain.

Meanwhile, slice snow peas into 1-inch lengths. In a medium bowl, combine snow peas and remaining ingredients.
3.
Add drained rice; mix well. Serve immediately or chill until ready to serve.
