Grilled Sausage with Summer Vegetables and Mostaccioli
Makes 6 servings
Ingredients
1 package BOB EVANS® Italian Grillin' Sausage or Italian Dinner Links (approximately 5 links)
2 medium green or yellow bell peppers, seeded and coarsely sliced
2 medium onions, thinly sliced
2 medium zucchini, unpeeled and sliced
4 cloves garlic, minced
1/4 cup olive oil
8 Italian plum tomatoes, cut into quarters
16 ounces mostaccioli or ziti, cooked according to package directions
1/2 cup grated Parmesan cheese
2 tablespoons chopped fresh basil
   
Precook sausage 10 minutes in gently boiling water. Remove from water and grill over medium coals until lightly browned and no longer pink. Cut into 3/4-inch slices.
Cook and stir bell peppers, onions, zucchini and garlic in olive oil in large skillet over medium heat about 10 minutes or until onions are translucent. Add tomatoes; cook and stir 5 minutes more. Transfer to large bowl; toss with grilled sausage and hot cooked mostaccioli. Sprinkle with cheese and basil. Refrigerate leftovers.
