Quick Black Beans & Yellow Rice
Makes 6 servings
Ingredients
1 small onion, chopped
1/2 cup chopped green bell pepper
2 cloves garlic, minced
2 cans (15 to 19 ounces each) black beans, undrained
1/4 cup Frank's® RedHot® Original Cayenne Pepper Sauce
1 teaspoon dried oregano leaves
1 bay leaf
  Yellow Rice (recipe follows)
   
Prep Time 5 minutes
Cook Time 15 minutes
1. Heat 1 tablespoon oil in large saucepan over medium-high heat. Cook and stir onion, bell pepper and garlic 3 minutes or until tender.
2. Stir in beans, Frank's RedHot Sauce and herbs. Cook 10 minutes over medium heat or until beans are heated through and flavors are blended, stirring occasionally. Discard bay leaf. Serve over Yellow Rice. Garnish with minced cilantro, if desired.
 
Yellow Rice   Add 1/4 teaspoon turmeric to cooking water for 1 cup white rice or 2 bags boil-in-bag rice.
