Tortilla Chicken Bake
Makes 4 servings
Easy recipe for kids and parents to make together.
 
Ingredients
1 can (14-1/2 ounces) DEL MONTE® Stewed Tomatoes - Seasoned with Garlic, Jalapenos, & Mexican Spices
1/2 cup chopped onion
2 cloves garlic, crushed
1/2 teaspoon dried oregano, crushed
1/2 teaspoon chili powder
1/2 pound boneless chicken, skinned and cut into strips
4 cups tortilla chips
3/4 cup shredded Monterey Jack cheese with jalapeño peppers or Cheddar cheese
   
Prep Time 3 minutes
Cook Time 25 minutes
1. Preheat oven to 375°F. Drain tomatoes, reserving liquid; chop tomatoes.
2. Combine reserved liquid, onion, garlic, oregano and chili powder in large skillet; boil 5 minutes, stirring occasionally.
3. Stir in tomatoes and chicken; cook over medium heat until chicken is no longer pink, about 5 minutes. Layer half of chips, chicken mixture and cheese in shallow 2-quart baking dish; repeat layers ending with cheese.
4. Cover and bake 15 minutes or until heated through. Serve with sour cream, if desired.
