Cheesy Pork and Potatoes
Yield: Makes 6 servings
Ingredients:
1/2
pound ground pork, cooked and crumbled

1/2
cup finely crushed saltine crackers

1/3
cup barbecue sauce

1
egg

3
tablespoons butter or margarine

1
tablespoon vegetable oil

4
potatoes, peeled and thinly sliced

1
onion, thinly sliced

1
cup shredded mozzarella cheese

2/3
cup evaporated milk

1
teaspoon salt

1/4
teaspoon paprika

1/8
teaspoon black pepper

Chopped fresh parsley (optional)



Preparation:
1.
Combine pork, crackers, barbecue sauce and egg in large bowl; shape mixture into 6 patties.

2.
Heat butter and oil in medium skillet. Cook and stir potatoes and onion until lightly browned; drain. Place in slow cooker.

3.
Combine cheese, milk, salt, paprika and pepper in small bowl. Pour into slow cooker. Layer pork patties on top.

4.
Cover; cook on LOW 3 to 5 hours. Garnish with parsley. Serve with vegetable side, if desired.
