can (20 ounces) DOLE® Pineapple Tidbits or Pineapple Chunks
|

1/2
|
cup DOLE® Seedless or Golden Raisins
|
|
1/2
|
cup sliced green onions
|
|
2

teaspoons finely chopped fresh ginger or 1/2 teaspoon ground ginger
|
|
1

clove garlic, finely chopped
|
|

cups cooked white or brown rice
|
|

cups chopped cooked chicken breast or turkey breast
|

tablespoons low-sodium soy sauce

• Drain pineapple tidbits, reserving 4 tablespoons juice.
|
|
• Heat 2 tablespoons reserved juice over medium heat in large, nonstick skillet. Add raisins, green onions, ginger and garlic; cook and stir 3 minutes.
|
|
• Stir in pineapple tidbits, rice, chicken, soy sauce and remaining 2 tablespoons juice. Cover; reduce heat to low and cook 5 minutes more or until heated through. Garnish with cherry tomatoes and green onions, if desired.
