Buckwheat Browns
Yield: Makes 6 servings

Ingredients:

cup cooked soba noodles, drained and chopped well
1/3
cup chopped cooked bacon
1/3
cup minced parsley
1/4
cup minced red bell pepper
1
teaspoon minced garlic
1
egg white, beaten until foamy
1/2
teaspoon black pepper
Nonstick cooking spray
Preparation:

Mix noodles with bacon, parsley, bell pepper, garlic and egg white. Stir well. Add ground black pepper and stir again. Egg white should be partially absorbed.

Spray a large skillet with nonstick cooking spray and place over medium-high heat. When pan is hot, use 1/4 cup measure to scoop noodle mixture onto hot skillet. Cook until noodles are browned on edges, about 3 to 4 minutes. Spray each noodle cluster with nonstick spray and flip to cook on other side. Cook about 3 to 4 minutes. Serve warm.
