Moussaka-Style Beef and Zucchini

medium zucchini
|

tablespoon vegetable oil
|
|

pound lean ground beef
|
|
1
|
medium onion, chopped
|
|
2

cloves garlic, minced
|
|
1

teaspoon dried basil
|
|
1/2

teaspoon ground cinnamon
|
|

cans (8 ounces each) tomato sauce
|
|
1/2
|
cup reduced-fat sour cream
|
|
1
|
egg yolk
|
|
1/4
|
cup feta cheese
|
|
|
|
|
|
|
|
|
|
1. Scrub zucchini; cut off ends. Cut each zucchini crosswise into thirds. Cut pieces lengthwise into slices.

2. Heat wok over high heat. Drizzle oil into wok; heat 30 seconds. Add zucchini; cook 8 minutes, stirring often. Remove to medium bowl.
|

3. Add beef to wok; stir-fry until well browned. Add onion and garlic; stir-fry 1 minute. Reduce heat to medium. Add basil and cinnamon; mix well. Stir in tomato sauce; cover and simmer 5 minutes. Mix sour cream and egg yolk in small bowl until well blended.

4. Skim fat from beef mixture. Spread beef mixture evenly in wok. Arrange zucchini on top. Spoon sour cream mixture in center of zucchini. Cover; cook 5 minutes or until top is set. Sprinkle with cheese. Remove from heat; let stand 1 minute. Serve hot.
