Jack O'Lantern Cookies
Makes about 4-1/2 dozen cookies
Ingredients
1 cup butter or margarine, softened
1/2 cup firmly packed light brown sugar
1/2 cup granulated sugar
2 eggs
1 teaspoon vanilla extract
1-1/3 cups all-purpose flour
1 teaspoon baking soda
1-1/2 cups rolled oats (quick or old-fashioned), uncooked
1 package (6 ounces) dried fruit bits
1-1/2 cups (6 ounces) Gjetost cheese, cut into 1/4-inch cubes
1 cup chopped walnuts
2 cups confectioners' sugar
2 to 3 tablespoons milk
  Orange and green food coloring
   
Preheat oven to 375°F. In small bowl with electric mixer, cream butter and sugars until light and fluffy. Blend in eggs and vanilla. In another small bowl, combine flour and baking soda; stir into dough. Blend in oats, fruit, cheese and walnuts. Shape tablespoons of dough into balls and place 2 inches apart on ungreased cookie sheets. Press down lightly with glass. Bake 10 minutes or until golden. Cool on wire racks.
In medium bowl, blend confectioners' sugar with enough milk to make a thick frosting. Divide in half. Color one-half with green food coloring and the remainder with orange food coloring. Decorate cookies in pumpkin design.
