Tomato Scalloped Potatoes

Tomato Scalloped Potatoes


Ingredients
1 can (14-1/2 ounces) DEL MONTE® Diced Tomatoes
1 pound red potatoes, thinly sliced
1 medium onion, chopped
1/2 cup whipping cream
1 cup (4 ounces) shredded Swiss cheese
3 tablespoons grated Parmesan cheese
   
Prep Time 8 minutes
Cook Time 30 minutes
1. Preheat oven to 350°F.
2. Drain tomatoes, reserving liquid; pour liquid into measuring cup. Add water to measure 1 cup.
3. Add reserved liquid, potatoes and onion to large skillet; cover. Cook 10 minutes or until tender.
4. Place potato mixture in 1-quart baking dish; top with tomatoes and cream. Sprinkle with cheeses.
5. Bake 20 minutes or until hot and bubbly. Sprinkle with chopped parsley, if desired.
