Turkey Burgers with Cilantro Pesto

Turkey Burgers with Cilantro Pesto

Ingredients

pound ground turkey
|
|
1/2
|
cup chopped onion
|
|
1/4
|
cup chunky salsa
|
|
1
|
jalapeño pepper, seeded and minced
|
|
1
|
teaspoon chopped garlic
|
|
1/2
|
teaspoon each dried oregano leaves and salt
|
|
4
|
hamburger buns, split and toasted
|
|

Cilantro Pesto (recipe follows)
|

|
|
1. Prepare charcoal grill for direct-heat cooking.
|
|
2. In medium bowl combine turkey, onion, salsa, jalapeño, garlic, oregano and salt. Shape mixture into four burgers, approximately 4-1/2 inches in diameter.
|
|
3. Grill 4 inches from the heat, 5 to 6 minutes per side until meat thermometer registers 165°F and meat is no longer pink in center.
|
|
4. To serve, place cooked burgers on bottom halves of buns; top each burger with 2 tablespoons Cilantro Pesto and top halves of buns.

Cilantro Pesto
Makes 2/3 cup

Ingredients

large clove garlic
|
|
1
|
cup packed cilantro leaves
|
|
1/4
|
cup each: chopped walnuts and Parmesan cheese
|
|
1/4
|
teaspoon salt
|
|
1/4
|
cup olive oil
|
|
|
|
|
|
|
|
|
1. In food processor, fitted with metal blade with motor running, drop garlic through feed tube to finely chop. Add cilantro, walnuts, cheese and salt. Process 45 seconds or until smooth. Scrape sides of bowl.

2. With motor running, slowly add olive oil and process until well blended. Cover and refrigerate several hours.
