Couscous and Apricots
Yield: Makes 4 servings
Ingredients:

can (5-1/2 ounces) apricot nectar or apple juice
1/2
cup thinly sliced celery
1/2
cup water
1/4
cup chopped dried apricots or apples
1/4
teaspoon ground allspice
1/8
teaspoon salt
1/3
cup couscous
1/3
cup quick-cooking brown rice
1/4
cup coarsely chopped walnuts
Preparation:

Combine apricot nectar, celery, water, apricots, allspice and salt in large saucepan. Bring to a boil over high heat. Remove from heat. Stir in couscous, brown rice and walnuts. Cover; let stand 5 minutes until liquid is absorbed. Fluff couscous mixture with fork.
