Ravioli with Tomatoes and Zucchini

Ravioli with Tomatoes and Zucchini

Ravioli with Tomatoes and Zucchini


Ingredients
2 packages (9 ounces each) fresh or frozen cheese ravioli or tortellini
3/4 pound hot Italian sausage, crumbled
2 cans (14-1/2 ounces each) DEL MONTE® Diced Tomatoes
1 medium zucchini, thinly sliced and quartered
1 teaspoon dried basil leaves
1/2 cup ricotta cheese or 2 tablespoons grated Parmesan cheese
   
Prep and Cook Time 20 minutes
1. Cook pasta according to package directions; drain.
2. Brown sausage in large skillet or saucepan over medium-high heat until no longer pink; drain, reserving sausage in skillet.
3. Add undrained tomatoes, zucchini and basil to skillet. Cook about 8 minutes or until zucchini is just tender-crisp, stirring occasionally. Season with pepper, if desired.
4. Spoon sauce over hot pasta. Top with ricotta cheese. Garnish, if desired.
