pound hot Italian sausage, crumbled

cans (14-1/2 ounces each) DEL MONTE® Diced Tomatoes

medium zucchini, thinly sliced and quartered

teaspoon dried basil leaves

cup ricotta cheese or 2 tablespoons grated Parmesan cheese
Prep and Cook Time
20 minutes
1. Cook pasta according to package directions; drain.
2. Brown sausage in large skillet or saucepan over medium-high heat until no longer pink; drain, reserving sausage in skillet.
3. Add undrained tomatoes, zucchini and basil to skillet. Cook about 8 minutes or until zucchini is just tender-crisp, stirring occasionally. Season with pepper, if desired.
4. Spoon sauce over hot pasta. Top with ricotta cheese. Garnish, if desired.
