Grilled Cobb Salad Sandwich
Yield: Makes 2 sandwiches
Ingredients:
1/2
avocado

1
green onion, chopped

1/2
teaspoon lemon juice

2
kaiser rolls, split

4
ounces thinly sliced deli chicken or turkey

4
slices cooked bacon

1
hard-cooked egg, sliced

2
slices (1 ounce each) Cheddar cheese

2
ounces blue cheese

Tomato slices (optional)

Olive oil



Preparation:
1.
Mash avocado in small bowl; stir in green onion and lemon juice. Season to taste with salt and black pepper. Spread avocado mixture on cut sides of roll tops. Layer roll bottoms with remaining ingredients except olive oil; close sandwiches with roll tops. Brush outsides of sandwiches lightly with olive oil.

Place large nonstick skillet over medium heat until hot. Add sandwiches. Cook sandwiches 4 to 5 minutes per side or until cheese melts and sandwiches are golden brown.
