Tomato Pesto Lasagna


Ingredients
8 ounces uncooked lasagna noodles (2 inches wide)
1 pound crumbled sausage or ground beef
1 can (14-1/2 ounces) DEL MONTE® Diced Tomatoes with Garlic & Onion
1 can (6 ounces) DEL MONTE Tomato Paste
8 ounces ricotta cheese
1 package (4 ounces) pesto sauce*
2 cups (8 ounces) shredded mozzarella cheese
  Grated Parmesan cheese (optional)
*Pesto sauce is available frozen or refrigerated at the supermarket.
   
Prep Time 20 minutes
Cook Time 30 minutes
Microwave Cook Time 10 minutes
1. Cook noodles according to package directions; rinse, drain and separate noodles.
2. Meanwhile, brown meat in large skillet; drain. Stir in undrained tomatoes, tomato paste and 3/4 cup water.
3. Layer 1/3 meat sauce, then half each of noodles, ricotta cheese, pesto and mozzarella cheese in 2-quart casserole or 9-inch square baking dish; repeat layers. Top with remaining meat sauce. Sprinkle with grated Parmesan cheese, if desired.
4. Bake at 350°F 30 minutes or until heated through.
 
Microwave Directions   Assemble lasagna in 9-inch square microwavable dish as directed. Cover with vented plastic wrap; microwave on HIGH 10 minutes, rotating dish after 5 minutes.
