Chicken Pesto Mozzarella
Makes 4 servings
Chicken Pesto Mozzarella

Chicken Pesto Mozzarella


Ingredients
6 to 8 ounces linguine or corkscrew pasta
4 boneless, skinless chicken breasts
1 tablespoon olive oil
1 can (14-1/2 ounces) DEL MONTE® Diced Tomatoes with Basil, Garlic & Oregano
1/2 medium onion, chopped
1/3 cup sliced ripe olives
4 teaspoons pesto sauce*
1/4 cup (1 ounce) shredded mozzarella cheese
*Pesto sauce is available frozen or refrigerated at the supermarket.
   
Prep Time 10 minutes
Cook Time 25 minutes
1. Cook pasta according to package directions; drain.
2. Meanwhile, season chicken with salt and pepper, if desired. In large skillet, brown chicken in hot oil over medium-high heat. Add undrained tomatoes, onion and olives; bring to boil. Cover and cook 8 minutes over medium heat.
3. Remove cover; cook about 8 minutes or until chicken is no longer pink in center.
4. Spread 1 teaspoon pesto over each chicken breast; top with cheese. Cover and cook until cheese is melted. Serve over pasta. Garnish, if desired.
