Makes 2 servings
Ingredients
1 tablespoon olive oil
2 boneless, skinless chicken breasts (about 8 ounces)
1 can (14-1/2 ounces) diced tomatoes, undrained
1-1/4 cups water
1 box UNCLE BEN'S® COUNTRY INN® Rice Pilaf
1/4 cup chopped fresh basil or 1-1/2 teaspoons dried basil leaves
   
1. Heat oil in large skillet. Add chicken; cook over medium-high heat 8 to 10 minutes or until lightly browned on both sides.
2. Add tomatoes, water, rice and contents of seasoning packet. Bring to a boil. Cover; reduce heat and simmer 15 to 18 minutes or until chicken is no longer pink in center and liquid is absorbed.
3. Stir in basil. Slice chicken and serve over rice.
 
Cook's Tip   For more flavor, substitute diced tomatoes with Italian herbs or roasted garlic for diced tomatoes.
