Mexican Cheese Fritters
Makes 8 to 10 servings

Ingredients

cup reduced-fat biscuit mix
|
|
1
|
cup cornmeal
|
|
1-1/2
|
cups low-fat buttermilk
|
|
1
|
cup (4 ounces) shredded JARLSBERG LITE™ Cheese
|
|
1
|
can (4 ounces) diced green chilies
|
|
2
|
cups frozen corn, thawed
|
|
1/2
|
to 1 teaspoon ground cumin
|
|
1/4
|
to 1/2 teaspoon ground red pepper
|
|
|
Prepared enchilada sauce, fresh or jarred green or red salsa and additional JARLSBERG LITE™ Cheese
|

|
|
|
|
Combine all ingredients except enchilada sauce, salsa and additional cheese; let stand 1/2 hour. On hot nonstick griddle, brushed with oil, drop batter by tablespoonfuls to make 2-inch fritters. Turn fritters when edges look dry. Serve with enchilada sauce, salsa and additional cheese.
